Ingredients:

  • 1 whole chicken or lamb
  • Salt, to taste
  • 2 tbsp. paprika
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. red chili powder
  • 2 tbsp. ginger paste
  • 2 tbsp. garlic paste
  • 1 lemon, juiced
  • 2 tbsp. oil
  • Rice, to serve
  • Roti, to serve

For the Chutney:

  • 2 green chilies
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 tbsp. lemon juice
  • Salt, to taste
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. red chili powder

Instructions:

  1. Preheat the oven to 400°F.
  1. Clean and debone the chicken or lamb.
  1. In a bowl, mix together the salt, paprika, cumin, coriander, red chili powder, ginger paste, garlic paste, lemon juice, and oil to form a marinade.
  1. Coat the chicken or lamb with the marinade and let it sit for 30 minutes.
  1. Place the chicken or lamb on a skewer and roast in the oven for 30-35 minutes or until fully cooked.
  1. For the chutney, blend together the green chilies, onion, tomato, lemon juice, salt, cumin, coriander, and red chili powder in a food processor.
  1. Serve the roasted chicken or lamb hot with rice and roti and a side of spicy chutney.
